Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 pound mushrooms, sliced
- 4 cloves garlic, minced
- 1 teaspoon thyme leaves
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
In a medium saucepan, combine quinoa and vegetable broth
Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed
In a large skillet, heat olive oil over medium heat
Add mushrooms and saut until browned and tender, about 5-7 minutes
Add minced garlic and thyme to the mushrooms, and saut for an additional 2 minutes until fragrant
Stir in cooked quinoa, mixing well with the mushrooms and garlic
Season with salt and pepper to taste
Cook for an additional 3-5 minutes, allowing the flavors to meld together
