Full of flavor, this grilled lemon herb chicken is Paleo-friendly and ideal for a nutritious dinner. The marinade infuses the chicken with garlic, aromatic herbs, and tart lemon, resulting in succulent, juicy chicken breasts that will not disappoint.
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh rosemary, chopped
- Salt and pepper, to taste
Instructions:
Combine the lemon juice, zest, olive oil, garlic, thyme, rosemary, salt, and pepper in a small bowl
Pour the marinade over the chicken breasts that have been placed in a shallow dish
Ensure that the chicken has an even coat
For a minimum of half an hour and a maximum of four hours, cover and chill
Grill at a medium-high temperature
Take the chicken out of the marinade and throw away any extra marinade
Chicken should be cooked through and no longer pink in the center after 6 to 8 minutes on each side of the grill
