Harvest Almond Chicken Salad



This harvest almond chicken salad is a perfect gluten-free option for a quick and delicious weeknight meal. Packed with flavor and texture from almonds, apples, and cranberries, it's a satisfying dish that's easy to make.

Ingredients:

  • 2 cups cooked chicken, diced
  • 1/2 cup sliced almonds
  • 1/2 cup diced apples
  • 1/2 cup dried cranberries
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the diced chicken, sliced almonds, diced apples, dried cranberries, chopped celery, and chopped red onion
