Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1/2 cup mini chocolate chips
- 1/2 cup ricotta cheese
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/4 cup mini chocolate chips for filling
- 1/4 cup mini chocolate chips for garnish
- Whipped cream optional
- Cannoli shells optional
Instructions:
Warm the oven up to 350 F 175C and put paper liners in a cupcake pan
Mix the cocoa powder, baking powder, baking soda, and salt in a bowl with a whisk
Granulated sugar, brown sugar, and vegetable oil should all be mixed together well in a different bowl
One egg at a time, making sure to mix well after each addition
Add the vanilla extract and mix well
It's best to start with the dry ingredients and end with the buttermilk as you add them to the wet ingredients
Don't mix any further than that
Add half a cup of mini chocolate chips and mix them in
Fill each cupcake liner about two thirds of the way to the top with batter
It's done when a toothpick stuck in the middle of a cupcake comes out clean after 18 to 20 minutes of baking
Now take them out of the oven and let them cool down all the way
Along with the powdered sugar, mix the ricotta cheese in a different bowl until it is smooth
Add 1/4 cup of mini chocolate chips and mix them in
Use a small knife or cupcake corer to make a hole in the middle of each cupcake after it has cooled
Mix the ricotta cheese and put some into each hole
If you want, you can put whipped cream, mini chocolate chips, and broken cannoli shells on top of the cupcakes
