Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1 cup root beer
- 1/4 cup buttermilk
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp root beer extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with paper liners
In a large bowl, whisk together the all-purpose flour, granulated sugar, and brown sugar
In a separate bowl, mix together the melted unsalted butter, root beer, buttermilk, egg, vanilla extract, and root beer extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix
In a small bowl, dissolve the baking soda in 1 tablespoon of water and then add it to the muffin batter
Mix gently to incorporate
Fill each muffin cup about 2/3 full with the batter
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
