Navy Bean Soup

Ingredients:

  • - 1 lb dried navy beans, soaked overnight
  • - 1 ham hock
  • - 1 onion, diced
  • - 2 carrots, sliced
  • - 2 celery stalks, chopped
  • - 3 cloves garlic, minced
  • - 8 cups chicken or vegetable broth
  • - 1 bay leaf
  • - 1 teaspoon dried thyme
  • - Salt and black pepper to taste
  • - 2 cups chopped fresh spinach
  • - Fresh parsley for garnish

Instructions:

Rinse and drain the soaked navy beans

In a large pot, combine navy beans, ham hock, diced onion, sliced carrots, chopped celery, minced garlic, chicken or vegetable broth, bay leaf, dried thyme, salt, and black pepper

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1

5 to 2 hours or until the beans are tender

Remove the ham hock, shred the meat, and return it to the pot

Discard the bone

Stir in chopped fresh spinach and cook until wilted

Adjust seasoning with salt and black pepper as needed
